CHOCOLATE CHIP PUMPKIN MUFFINS






Who's excited that it's almost October?! Full fledged fall is here {and other than the fact that it means it's time for Thane to deploy} I'm thrilled! So to ring in the season correctly, we had to have some chocolate chip pumpkin muffins. They turned out delicious, here's the recipe in case you want to give it a try:

3/4 Cup white sugar
1/4 Cup vegetable oil
2 eggs
3/4 canned pumpkin
1/4 Cup water
1.5 Cups all purpose flour
3/4 Teaspoon baking powder
1/2 Teaspoon baking soda
1 Teaspoon ground cinnamon
1 Teaspoon nutmeg {adjust to your taste}
1/4 Teaspoon salt
1/2 Cup semi-sweet chocolate chips
1/2 Cup walnuts

Mix it all up and bake at 400 degrees for about 20 minutes! And for perfection, have it with a cup of coffee!
